New Orleans

Oh hai! Megan here. Yes, I still exist. I was almost swallowed up by the terror of finals, but I came out victorious. Miracles happen, people. I am still not out of the woods quite yet, but I have done the worst of the things. There were many things.

So 'bout three weeks ago I went to New Orleans! True story. Here are some pictures for your viewing pleasure.

We took a six-hour flight with one stop and one layover. The skies that day were ferocious, and having watched the first episode of LOST not 48 hours before, I was a bit terrified. Turbulence is a fun feeling when you're riding a roller coaster, but when you're on a plane, no bueno.

Apparently it was stripe day.

New Orleans has great book stores. Great book stores have cats.

 Beautiful architecture

The streetcar that we took. We inadvertently toured...
...the garden district. A beautiful place where there are gorgeous homes and, of course, gardens.

Pralines are said "PRAW-leens" They're super sweet. But my favorite sweet things in NOLA were...

Beignets! Imagine a scone and a hootnannie (AKA German Pancake) are madly in love and they have a child. Imagine that child is sprinkled with so much powdered sugar that it looks like the snow on the top of the Himalayas.  This is a beignet. Because of the amount of daily powdered sugar avalanches that occur in this 24-hour, seven days a week joint, the flour is caked in the white stuff. It's a bit sick, actually. But those man-catching beignets are divine.

You guys... this is the Mississippi river. I'm not sure if this picture is on the East or West side of it (it's nigh impossible to judge directions without mountains, mmmkay?) The point is, I know that I did cross this mighty river. So I HAVE BEEN EAST OF THE MISSISSIPPI. This fact is so wonderful, I put it in caps. Big deal for me. I'm just happy this has happened. By the way, this river is gross and big, but it's an American legend so you just have to love it anyway.

The true reason for going to NOLA -- the conference. There was a lot about grammar. You just had to be there. If I told you all the things I learned, you'd probably be super bored. But suffice it to say, I was entertained and enlightened by grammar nerds from all around the country.

New Orleans is loud and windy.

I wish I got a better picture of Cassandra, our instructor for the cooking class we took. The food was delicious and it was prepared before our very eyes. We had unlimited lemonade and as she cooked, she talked about the history of the area and how it related to cooking. Add that in with an amazing accent and charm, and you have the most adorable cooking class ever!

The Audubon Aquarium was fantastic because it had beautiful sea horses and jellyfish, among other exciting sea things.

Oh the trees in Audubon Park! Their branches bend low to the ground, and some go underneath the ground and come back up again. How this happens I do not know.

Live Oaks.
I loved being in Louisiana for a million reasons, some of which being that it was hot (and I heard it snowed back home); Sam was once here, and it made me feel that much more connected to him and his past (he served a mission in Louisiana, although he never served in New Orleans); I loved being with my Chrony friends and getting a break from school for a few days; I loved learning about copy editing and journalism. The conference was really great.

I want to give a big thank-you to everyone who helped us get to NOLA. It was real.

Instagram catch up

I usually write more, but sometimes photos are just better. And more will come. My life will never be more busy or more amazing.

I woke up today and I counted all my blessings. I have so many. This may sound weird, but I just love being inside my own head. I could spend hours in there talking to myself and figuring out life. I just love thinking. So if I disappear, that's probably where I am. I'm not going crazy, I'm going home.

So I've been cheating on this blog with my blog for the Chronicle, check it out here.

Food. That stuff you eat.

I'm famous for my rules. No kissing on the first date, always wear tights or nylons with skirts... etc. But being a college student has severely altered my stance on food.

I used to have clear, defined lines of what food belonged at what time of the day. Breakfast food, and especially cereal, belonged only in the a.m.; mac and cheese for lunch; and steak and potatoes for dinner.

Now, I'm known to eat eggs at any time of day. Mostly because I rarely eat meat anymore, so I have to get my protein somehow. And it just so happens that other breakfast foods happen to be cheap and easy to fix. That's why I'm eating a bagel at one o'clock in the morning.

I also used to have this grudge against leftovers. I mean, I'd eat them, but I didn't enjoy it, and when my mom pulled out the week's leftovers for left over night, I rolled my eyes snobbishly wished that she'd made an original meal.

Now, I cherish every scrap of food I have. Nothing goes to waste. I must eat everything and if I cannot, I must save it for later.

And free food? I can smell it from a mile away. Thank you, Institute, and other benevolent third parties who impart of your good graces and share food with us college students!

I also find myself eating the same thing for lunch, and dinner, and the next day's dinner... until the meal that was supposed to feed 10 people is now gone. Consumed by one.

I tried out this recipe and loved it will all my stomach and heart. So did Sam. You should try it. (I used vegetable stock, but do what you will.)

Old Maid Meg's Muffins and Eggs

If you follow me on Pinterest, then you probably have noticed that I have a thing for muffins. This summer I've made a few batches, and I just bought my very own muffin tin!

I found the perfect blueberry muffin recipe {here}. They looked like this:

Brittni and I delivered them to the mothers of our friends on missions. (It says, "There's muffin' better than a missionary mom.")

Then I tried Glazed Doughnut Muffins. I panicked when I realized that I didn't have any liners, but I sprayed really well and they turned out just dandy. I actually prefer it that way, and it saves the planet!
Photobucket
Those were oh so heavenly. That recipe is found {here}.

I would recommend making more frosting than it calls for. I doubled the recipe and the frosting, but I maybe would have tripled the frosting. But I like frosting, so you know.

Holy whoa am I actually blogging about food? What is this world coming to? I don't know, but muffins are pretty much as awesome as cupcakes, except healthier (generally).

One of my goals for the upcoming semester is to make a different kind of muffin every week! And throughout that week I'll eat them for breakfast and share with my roommates and etc. Oh of course I'm going to tell you guys all about it!

Get ready for Muffin Mondays! Starting the August 22.

See you then!

American Summer

Summer has a magic laziness to it. I am busy, but without a real schedule to speak of. The hot days are filled with trips to the nursery, heritage days, fireworks, and sleeping in a tent in the backyard for no real reason.

Spending a worthwhile $4 to ride the Gravitron, a fabled amusement park ride I had only heard about in my parents' nostalgia. It exists, people. You step into a flying saucer-like room. It spins around really fast and you're subjected to several G's. It's like taking off into outer space.

Cooking and baking. (Muffins, specifically.)

Jello is pretty awesome, too.

Trying out hairstyles for the upcoming musical.
I look like a Gibson Girl, no? OK, I'm getting there. Practice makes perfecto.

I can't wait for the 4th tomorrow. We're starting out with a 5k and ending with a rodeo.

Vegetables are awesomespice

I'm afraid I've been thinking. Probably too much, which is dangerous. We all know this thanks to Gaston.

I've been thinking about a lot of controversial things.

Like being "green." Or, as I like to say, "a responsible human being." I think I have an anxiety disorder, because no matter what I'm doing, I can't stop thinking about all the harm I'm doing to the earth. I took a long shower this morning and I forgot to unplug my phone charger. Yesterday I ate a steak, and although I know that the beef came from a reputable source and so the cow was not subject to pain and suffering during its life, was ethically killed, and was not shipped over hundreds of miles to reach my table, I could not shake the awful feeling I had that I was eating an animal. I was eating flesh!
Photobucket
I have really started to cut back on meat because it really is better for the environment (and for your health.) I really like being vegetarian, but I sometimes do eat meat, for a few reasons.

1) I need some protein sometimes. I'm not a picky eater and I have few allergies, so I usually don't have a problem getting enough protein through other means. But sometimes it's just not happening any other way.

2) If I eat meat, though, it's going to be good meat. Not a marbled meat (which one should never eat. I love hot dogs, but they're just so bad for you...) I'll eat meat if I know it was raised and harvested responsibly and locally, and if it's lean and unprocessed.

3)I don't want to offend people. Someday, meat won't be such a big deal to people, but for now, if I go to some social event and I don't eat meat, the host often will be offended. Would they get offended if I didn't like vegetables? Probably not as much, but whatever. Eating is a social thing, so sometimes I'm just polite and have some meat so everyone feels comfortable.

I've found that people get strangely defensive when I try to explain that I don't eat meat. Then they criticize me if I do eat a little meat once I've said that I'm a vegetarian. This is my usual response to those people.

  • First, I never said YOU had to abstain from meat, I just said I wasn't. You don't have to justify why you eat it to me. I know.
  • Second, it's not a diet. I'm not eating to loose weight or gain weight. I'm eating to be healthy and conscious of those in the world around me. (Later I'm going to rant about dieting.)
  • Third, my arguments for vegetarianism are not any less valid if I do eat some meat. I may not be absolute, but at least I'm trying.

Vegetarianism is not a religion. I'm LDS, and we are advised in the word of wisdom to eat "very little meat." I feel that I am being more obedient to that now that I've changed my eating habits.

And you guys, there are so many awesome fruits and veggies. If you're a picky eater, I just don't know what to tell you. There is so much good stuff out there, meat is only one part of the food pyramid. Even if you still want to eat meat, try making it a more balanced part of your diet. Try being a vegetarian just one day out of the week to help reduce your carbon footprint.

Try some peas, carrots, jicama, strawberries, peaches, asparagus, broccoli, corn, potatoes, squash, zucchini, cucumbers, apples, spinach, tomatoes, avocados, blueberries, grapes, oranges, pears... the list goes on and on. I rarely feel like I'm missing out on anything.

Sorry if this post seemed long and preachy. I feel that this is important, and it is something that troubles me often. I have a lot of other issues with food, but I'll save those for later. Thanks for reading my crazy mind...

Things I love about being home

Photobucket
I love nail polish names. This one is "excuse me"
This was part of my petition to bring back spring. The trees have blossoms, but I'm so cold...

Photobucket

My cousin! I have so many cousins, and this girl is extra special. We're going to go on a cupcake cousin date soon. I can't wait. I love cousins, and I love cupcakes. Pretty much bliss.

Photobucket

Healthful pita make-it-yourself pizzas. This one has olives, pineapples, sun-dried tomatoes, spinach, and--of course--tomato sauce and lots of cheese. I'm allergic to pineapples unless they are cooked, so I love them on my pizza.

Food for Thought

Tonight I went to the famous La Caille. Some Chronicle dinner thing for current staff and alumni to mingle and celebrate the achievements of former Chrony kids who actually did something with their journalism degrees. The food and atmosphere was amazing, I felt like I stepped in a magazine.

Except by stepping into that magazine, I was also stepping into the world of journalism--a side I had never seen.

Our speakers were blunt and honest about the rival papers in Utah--they do not like each other. There was much tension and awkwardness, especially when most speakers pretended that The Chronicle didn't even exist. They only talked about the major dailies, even though the banquet was to celebrate The Chronicle.

I'm not going to be a journalist. But I love working at The Chronicle. I learn a lot. I meet great people and I love what I do.

This is what I wore tonight. My fringe bangs have returned. (I cut them a little liberally... I anticipate they will grow out ungainly soon.)

Photobucket

I was a little worried that I was being scattered with the colors. It was random, but I feel the shoes tied it together.

Photobucket

And I'm wearing the shoes I got from my great grandma... (she always wanted me to be a journalist.)

Photobucket

Yes, I wore this same dress as my swimsuit cover whilst in Mexico. I think it's amazing that this piece can be so versatile.

Photobucket

It was a great night. Still getting over a cold, but the crem brule was pretty awesome. I love dressing up.

Loves!

p.s. Whilst I was composing this post, my Pandora played this song... and I could swear the girl was saying "dear paul" and I was all "how could this be? I'm probably just delusional and crazy" but I wasn't! I went over to my ipod and the song was actually called "Dear Paul"and it was so creepily applicable to my life. So I tried to like the song... but instead by accident pushed the 'next' button. TRAGIC! Only 1 thing to do--go to iTunes. I probably would have bought it regardless.

That, my friends, is the flag of Mexico.

Outside: the sea. Inside: a nice elevator. (My mom and aunt.)

See that skin of mine? Burnt to a crisp. Even Lindsey, the tan one, got scathed by the wonderful hot rays of the star that our plant orbits around.

Photobucket
This is the store of Alejandro, one of the nicest men I've ever met. I practiced my Spanish by speaking to him while buying my bag and vanilla. My mom is super great at not only speaking Spanish, but bargaining and bartering! We were afraid to go to the flea market without her!

Watermelon pie! (Sorbert and chocolate chips.)

We are Dutch, sailing on Holland America. Suffice it to say... we ate twice our weight in sweets. Oh how I love a good sugar rush. Mmmm.

And it was made possible by my wonderful parents!
